This is a hearty recipe great as comfort food as well as rainy cold winter nights, and it takes only fifteen to twenty minutes to prepare, and the rest leave it to the crock pot so about 8 hours, it can cook while you sleep. The following recipe makes for 8 servings, plus they are great over spaghetti or alone:

The first thing to do is to cut the roast into about 2 inch cubes and trim the extra fat

Season the cut cubes with olive oil, the salt and the cracked pepper

Heat the heavy bottom skillet for three minutes over medium heat, then add the beef cubes and cook for another five to seven minutes until it is brown all over

Now add the shallots and garlic and cook for two to three minutes and turn off heat

Heat the baby carrots in the microwaveable dish for five minutes

Place the beef, onions, garlic, the mushrooms, the glass of wine and the carrots in the crock pot and cook for 8 hours on slow.
