How to Make Easy Chicken Curry
Curry is one of the most popular dishes in the UK, as well as throughout the world. It is simple to make, very tasty and with so many variations you can add your own ingredients to make it truly unique.
This is a dish enjoyed by many students in the UK as it is cheap to make, easy to do and doesn’t take a genius to create. You can add in different ingredients, such as finely chopped fresh root ginger, perhaps a finely chopped red or green pepper or half a pint of plain yoghurt if you want to make it very creamy. I know some who have added raisins, beer, brandy and even peanuts – chicken curry is so easy that you can customise it anyway you want.
What You Will Need:
2 tablespoons of vegetable oil
1 onion, chopped into pieces
1 green or red pepper, seeded and diced
1 garlic clove, chopped finely
One and a half tablespoons of curry powder
Half a teaspoon of dried thyme
450g of tomatoes skinned and seeded and chopped (or you can use canned chopped tomatoes)
2 tablespoons of lemon juice
120ml of water
55g of currants or raisins
Salt and pepper
1.5kg of chicken cut into 8 pieces and then skinned
Cooked rice, to serve
One. Preheat the oven to Gas Mark 4 or 180 dgrees.
Two. Take a deep frying pan and heat up the oil. Next, add the garlic, the diced pepper and the onion together.
Three. Cook the vegetables, stirring occasionally until they are nice and soft.
Four. Stir in the curry powder and the thyme. Next, add the lemon juice, the water and the tomatoes. Bring the sauce to boil, making sure you stir constantly. Season to taste with the salt and pepper.
Five. Take the chicken pieces and place them in the frying pan or casserole pan, making sure that they are arranged in one layer only. Turn them to coat the chicken with the sauce. Cover the pan and transfer to the oven.
Six. Cook in the oven for about 40 minutes or until the chicken is nice and tender. Remember to turn the chicken halfway through cooking.
Seven. Once the chicken is thoroughly cooked, transfer the chicken and the sauce to a warmed serving platter.
Eight. Serve the chicken and sauce with a bed of freshly boiled fragrant white rice and enjoy your delicious homemade easy chicken curry.
