This is a recipe to Make Curried Beef or Beef Curry. I have a very old cookbook from Rubbermaid Employees that I am using to put up recipes that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood. So far, the recipes are getting lots of views, so I will keep going. This meal of Curried Beef with Rice is great to serve your guests. In a deep saucepan, melt 1/2 stick butter. fry 1 1/2 lbs lean beef that has been cut into 1″ cubes like stew beef. Brown lightly on all sides. Remove from pan, but keep hot.
Peel and chop 1 large onion. Peel, core, and slice 1 sour apple. Fry these in the same skillet the meat was in until golden brown.
Sprinkle in some flour (approx. 1/4 C or more) and 2 t. curry powder and fry gently for 5 minutes to cook the flour. Add 3 C beef stock, 1 – 2 t. curry paste, 2 t. chutney, and some salt and pepper to taste. Stir well and cook until boiling.
Replace the hot meat; cover tightly, and simmer gently for 1 1/2 – 2 hours.
Add the juice of 1/2 a lemon sqeezed through your fingers to catch the seeds. Stir in.
Just before serving, Add 2 t. jam or jelly and extra seasoning, if you like.
Serve over rice. Makes about 4 servings.
