Quick Pancake Recipes-Two Recipes Using Winter Fruit

BREAKFAST #1: Orange-Banana Pancakes

  • pinch of salt
  • pinch of sugar
  • 1 cup of low-fat milk
  • 1 cup of flour
  • 2 medium oranges
  • 2 large rip bananas
  • 2 teaspoons of baking powder
  • 2 large eggs

INSTRUCTIONS:

  1. Place your ingredients on the table before you begin cooking.
  2. Mash the 2 bananas on a small plate and place to the side.
  3. Use a large mixing bowl and blend salt, sugar, low-fat milk, flour, baking powder, and eggs.  Wait 1 minute and add the mashed bananas.
  4. Using the cooking spray, spray the bottom of the frying pan/skillet.
  5. After mixing the above ingredients, pour a small amount of pancake batter in the center of the heated frying pan. 
  6. Allow the pancake to become a golden brown at the bottom and flip to the other side.
  7. Slice both oranges into small pieces while removing any seeds.
  8. Once completely cooked in the middle and sufficiently brown, remove pancake from the frying pan and place on a medium size serving plate.
  9. Serve hot with low-fat butter and sliced oranges on top of the pancakes.  

BREAKFAST #2; PEAR PANCAKES

  • pinch of salt
  • 1 medium can of pears
  • 1 large egg
  • 1 cup of low-fat milk
  • 1 cup of flour
  • cooking spray

INGREDIENTS:

  1. Place the above ingredients on the table along with a medium bowl and a skillet.
  2. Place flour into the bowl and add the egg and milk and mix.
  3. Blend the mixture on high for up to 2 minutes, or until smooth texture; Place the blender to the side.
  4. Add cooking spray to the skillet and heat on medium.
  5. Pour the pancake batter in the skillet and cook on each side until golden brown.
  6. In separate skillet, heat the pears for richer flavor.
  7. Remove pancakes from skillet and place on medium plate and add your cooked pears on top with low-fat butter. Serve hot.

TIP: Each pancake recipe can serve 2-4. You may want to freeze any unused pancakes for the next day
